Why Sheep. Why Now.
In case you haven't noticed, food is becoming a luxury. And clean food, accessible in rural areas, is simultaneously becoming a scarcity.
ENTER: Sheep.
Sheep have long been forgotten in modern American culture as a delicious food source rivaling beef. Chickens, pigs, and cows have out-advertised them. Goats have been over-promoted for milk production. And the humble sheep has faded into obscurity in American food culture.
So why build a program around them?
Because the humble sheep is easier to get along with than goats. The sheep is far more efficient to be kept even on small acreage (or no acreage) than large livestock. They produce more of themselves quickly, providing both milk and meat for their families. They're easy for young and old to handle, safer than a cow. Because sheep milk is one of the most nutrient-dense and underutilized dairy resources in the United States. The sheep is recognized around the world for its thrifty diversity. Yet, in America, irrelevant range war culture from 100+ years ago vilified the sheep. It left a gap in our food system.
That gap is opportunity.
Maverick Sheep Co. exists to advance performance-driven Assaf dairy genetics in Texas- not as a novelty, but as infrastructure. But extreme milk performance may not fit every homestead. To remedy that, we've selected a secondary breed, more thrifty than the Assaf, to create a parallel secondary ranch offering- hybrid vigor with high (but manageable milk yields), the most delicious lamb you can feed to your family, ready to butcher quicker than typical Heritage breeds. The goal is simple: by keeping only the best Assaf rams for our program, offer pureblood Assaf dairy ewe lambs from our small pure Assaf flock for families that want up to a gallon of milk a day, and also offer a Heritage hybrid breed from our larger flock (crossed with our Assaf rams) that require less intensive management.
At the same time, every animal must have purpose. Rams that do not enter the breeding program are raised for the table: pasture-grown and thoughtfully finished to produce clean, flavorful lamb. Dairy and meat are not separate systems here. They are aligned.
