Pioneering Sheep Milk in Texas.
Maverick Sheep Co. is advancing Assaf dairy genetics in Texas- building the foundation for sheep milk to become a household staple. We also raise pastured table lamb and practical crossbred "Homestead Dairy" ewes for families who want real food and resilient livestock.

A New Standard for Sheep
Maverick Sheep Co. is advancing performance-driven Assaf dairy genetics while producing practical, pasture-raised lamb for modern tables. We are developing sheep that work- on grass, in homesteads, and within resilient food systems.
Sheep milk is one of the most nutrient-dense and underutilized dairy resources in America. Our goal is to make it practical, accessible, and commonplace for American families to raise themselves, even without acreage.
This isn't hobby farming. It's intentional livestock development for the future- because better genetics build better food systems, and better food builds stronger homes.
![So let me show you the difference between AI and real hand-drawn art. The first (red) is hand-drawn, [swipe 👉] the second (turquoise) is AI. AI will never replace the depth, soul, planning, foresight, aesthetic, and even the slight imperfections of a human hand. 🖊️ While I’m not necessarily against AI, it has limitations that are evident that can never replace the perfectly imperfect soul of a human, or the creativity. The creation can NEVER be bigger or better than its creator. Humans created AI. Not the other way around. We would do good to remember that.
If you don’t already follow me #mavericksheepco you might want to. I do a lot more than sell sheep over there. 🐑 Coming soon are sheep milk soap, felted soap, and various wool items. There may or may not be pulled wool saddle pads in the planning stages with some of my HAND SHEARED THE OLD FASHIONED WAY wool, from my very own flock 😅 🐑 I’m out here in the high desert milking sheep, shearing them like the 1880’s, studying lamb cut charts, learning new wool Granny hobbies by the day, and generally proving that America was more American when vast flocks roamed our country. Like the Navajo say, Sheep is life! ✌️💛🐑

Not written with the help of AI either 😂 I have plenty of my own thoughts thank you!](https://scontent-den2-1.cdninstagram.com/v/t51.82787-15/709206103_18056137391557706_3560827614956005476_n.jpg?stp=dst-jpg_e35_tt6&_nc_cat=111&ccb=7-5&_nc_sid=18de74&efg=eyJlZmdfdGFnIjoiQ0FST1VTRUxfSVRFTS5iZXN0X2ltYWdlX3VybGdlbi5DMyJ9&_nc_ohc=09w6XmSMCngQ7kNvwEwXsgG&_nc_oc=AdpxXMBlk_ajRJHReqjZpvRmuWyPF5y3ysnhr09DM4vpj00baSaOexAd6wEtbiUTip4&_nc_zt=23&_nc_ht=scontent-den2-1.cdninstagram.com&edm=ANo9K5cEAAAA&_nc_gid=rexmypDZNdZvcuFX1NtIdg&_nc_tpa=Q5bMBQI4JXzQe0XzjurVpP4Kk_Iz2iKjB04UYxjsWtYLdjZedV8aP3pOYNAYbW5X8-tHkeLYJxDi0kC3&oh=00_AQTbgF0jvTahwt-aYDnCu2LKqv688I99G1V1Eqvryq4fgw&oe=6AEE4138)
The Maverick Standard
What Sets Our Flock Apart
Performance Genetics
We prioritize production, structure, and temperament- developing sheep that thrive on pasture and contribute to stronger, more resilient food systems.
Grass-Driven Production
Our lambs are raised on pasture to produce clean, nutrient-dense protein. We focus on efficient growth, functional animals, and real-world results. Even in a harsh native environment in arid Texas climate.
Practical Dairy
We are working to make sheep milk accessible and usable for modern families- from high-performing purebred Assaf sheep, to moderate-yield crossbreds suited for homesteads.
From the Founder...
Sheep milk is one of the most nutrient-dense and underutilized dairy resources in America- naturally higher in protein, butterfat, and total solids than cow or goat milk. Around the world, it's valued for its richness and efficiency. Here, it remains rare.
Maverick Sheep Co. began with a simple question:
why?
We believe intentional genetics, pasture-based systems, and practical dairy animals can change that answer- starting in Texas.
Beyond dairy, we produce boxed lamb from pasture-raised animals thoughtfully finished for tenderness and flavor. Every ram that doesn't enter the breeding program contributes to high-quality protein raised with honor and intention.
