Maverick Sheep Co. was founded with a clear objective: to advance performance-driven Assaf dairy genetics in Texas and make sheep milk a practical, accessible superfood for everyday families.
While sheep milk is widely celebrated worldwide for its richness and efficiency, it remains rare in the United States. That's not a limitation, that's a missed opportunity we're taking as a mission- a chance to provide nutritious, sustainable food to those who want to take control of what they eat.
Our program develops sheep that thrive on pasture, deliver manageable amounts of delicious milk (sheep milk tastes a little bit like melted ice cream), and produce healthy protein through thoughtful lamb finishing. Every animal has purpose, whether it contributes to your morning glass of milk, or a wholesome meal on your table. We provide breeding stock that does two things well, with a bonus- milk, delicious meat, and manageable wool for crafts/textiles/soil enhancement.
This is not hobby farming. It is intentional livestock development designed to help people live more food-secure, resilient, and independent lives- building stronger homes and stronger communities, one sheep at a time.
My goal in life is to help as many families as possible get their first dairy sheep, and take that first step to sustainability outside the reach of a crumbling system. Food security is true freedom! And I want you to know- you don't have to be a cattle baron, own 100 acres, or live off a trust fund to do this. Sheep are simple. And, as the Navajo say, "Sheep is Life"
